Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 0.5 cup dry white wine (like Chardonnay or Pinot Grigio)
  • 2 cups chicken broth
  • 1.5 cups heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 pound fettuccine or penne pasta
  • 0.25 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until browned on all sides and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  2. Add sliced mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Pour in white wine and deglaze the pan, scraping up any browned bits from the bottom. Cook until the wine has mostly evaporated, about 2-3 minutes.
  5. Stir in chicken broth and heavy cream. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce slightly thickens.
  6. Stir in grated Parmesan cheese until melted and smooth.
  7. While the sauce is simmering, cook pasta according to package directions until al dente. Drain well.
  8. Return cooked chicken to the skillet with the sauce. Add the cooked pasta and toss to coat everything evenly.
  9. Serve immediately, garnished with fresh chopped parsley.

Notes

  • For a richer flavor, use a good quality dry white wine.
  • If the sauce becomes too thick, add a splash of pasta water to thin it out.
  • This dish is best served immediately.
