- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or hot, casing removed)
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 large russet potatoes, peeled and diced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 bunch kale, tough stems removed and leaves chopped
- 1/2 cup heavy cream (optional)
- Parmesan cheese, grated (for serving)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat.
- Add onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes.
- Stir in minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in chicken broth and diced tomatoes. Add diced potatoes. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in chopped kale and cook until wilted, about 5 minutes.
- If using, stir in heavy cream. Season with salt and black pepper to taste.
- Ladle hot soup into bowls. Serve with grated Parmesan cheese.
Notes
- Adjust red pepper flakes for desired spice level.
- For a thicker soup, mash some of the potatoes against the side of the pot.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
