Ingredients

  • 1 pound Italian sausage (mild or hot, casing removed)
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 large russet potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 bunch kale, tough stems removed and leaves chopped
  • 1/2 cup heavy cream (optional)
  • Parmesan cheese, grated (for serving)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes.
  3. Stir in minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in chicken broth and diced tomatoes. Add diced potatoes. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender.
  5. Stir in chopped kale and cook until wilted, about 5 minutes.
  6. If using, stir in heavy cream. Season with salt and black pepper to taste.
  7. Ladle hot soup into bowls. Serve with grated Parmesan cheese.

Notes

  • Adjust red pepper flakes for desired spice level.
  • For a thicker soup, mash some of the potatoes against the side of the pot.
