Description

These healthy peanut butter Greek yogurt cookies are a delicious and guilt-free treat. They are soft, chewy, and packed with protein.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce
  • Optional: 1/4 cup chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the whole wheat flour, rolled oats, baking soda, and salt.
  3. In a separate large bowl, combine the peanut butter, honey or maple syrup, Greek yogurt, vanilla extract, and applesauce. Mix until well combined and smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. If using, fold in chocolate chips or chopped nuts.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly with your fingers or the bottom of a glass.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
