- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tbsp honey (optional, for sweetness)
Instructions
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- If using, stir in the honey.
- Pour the batter into a greased 8×8 inch baking pan.
- Chill in the refrigerator for at least 30 minutes to allow the batter to thicken.
- Serve chilled or at room temperature.
Notes
- For a sweeter cornbread, you can increase the sugar or honey.
- Add corn kernels or cheese to the batter for extra flavor.
- This cornbread is best served fresh.
