Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 4 cups shredded cabbage
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell pepper (any color)
  • 2 green onions, sliced

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  4. Add minced garlic, grated ginger, and red pepper flakes (if using) to the skillet. Cook for 1 minute until fragrant.
  5. Add shredded cabbage, carrots, and bell pepper to the skillet. Stir fry for 3-5 minutes until vegetables are tender-crisp.
  6. Pour the prepared sauce over the beef and vegetables. Stir well to coat.
  7. Cook for another 1-2 minutes until the sauce has thickened.
  8. Stir in sliced green onions before serving.
