- 1 pound ground beef
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup water
- 4 cups shredded cabbage
- 1/2 cup sliced carrots
- 1/2 cup sliced bell pepper (any color)
- 2 green onions, sliced
Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add minced garlic, grated ginger, and red pepper flakes (if using) to the skillet. Cook for 1 minute until fragrant.
- Add shredded cabbage, carrots, and bell pepper to the skillet. Stir fry for 3-5 minutes until vegetables are tender-crisp.
- Pour the prepared sauce over the beef and vegetables. Stir well to coat.
- Cook for another 1-2 minutes until the sauce has thickened.
- Stir in sliced green onions before serving.
Notes
- Serve over brown rice or quinoa for a complete meal.
- Adjust red pepper flakes to your preferred spice level.
- Feel free to add other vegetables like broccoli florets or snap peas.
