  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup sliced bell pepper
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Cooked rice for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 5-7 minutes, or until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, honey, garlic, and ginger.
  5. Pour the sauce over the chicken and vegetables. Stir to coat and cook for another 1-2 minutes until the sauce thickens slightly.
  6. Serve immediately over cooked rice.
