- 1 pound ground chicken
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/2 cup sliced bell pepper
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Cooked rice for serving
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 5-7 minutes, or until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, honey, garlic, and ginger.
- Pour the sauce over the chicken and vegetables. Stir to coat and cook for another 1-2 minutes until the sauce thickens slightly.
- Serve immediately over cooked rice.
Notes
- For extra spice, add a pinch of red pepper flakes with the garlic and ginger.
- You can substitute other vegetables like snap peas, mushrooms, or onions.
