Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup full-fat coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers
  • Olive oil, for brushing

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together coconut milk, soy sauce, lime juice, honey, ginger, garlic, and red pepper flakes.
  3. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken onto the skewers, discarding any excess marinade.
  6. Lightly brush the grill grates with olive oil.
