A recipe for potatoes topped with grilled steak pieces and standard loaded toppings.

- 4 large russet potatoes
- 1 pound sirloin steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices cooked bacon, crumbled
- 2 tablespoons chopped chives
Instructions
- Preheat your grill to medium-high heat.
- Prick the potatoes several times with a fork. Rub the potatoes lightly with a little olive oil and sprinkle with salt.
- Grill the potatoes directly over medium heat for 45 to 60 minutes, turning occasionally, until tender when pierced with a fork.
- While the potatoes cook, toss the steak cubes with the remaining olive oil, salt, and pepper.
- Place the steak cubes on the grill. Cook for 3 to 4 minutes per side for medium-rare, or until cooked to your preference. Remove from the grill and set aside.
- Once the potatoes are cooked, carefully slice them open lengthwise. Gently fluff the inside with a fork.
- Top each potato half with the grilled steak bites, shredded cheddar cheese, sour cream, crumbled bacon, and chopped chives.
Notes
- You can bake the potatoes in an oven at 400 degrees Fahrenheit for about one hour if you prefer not to grill them.
- Use any cut of steak you prefer for the bites.
