Description
Quick quesadillas filled with grilled vegetables and cheese, seasoned with Mediterranean flavors.
Ingredients

- 4 large flour tortillas
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1/2 red onion, sliced
- 1 cup chopped fresh spinach
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Toss the zucchini, bell pepper, and red onion with olive oil, oregano, garlic powder, salt, and pepper.
- Grill the vegetables over medium heat until tender and slightly charred, about 5-7 minutes. Set aside.
- Wipe the grill clean or use a large skillet over medium heat.
- Place one tortilla in the pan. Sprinkle half of the Monterey Jack cheese over the tortilla.
- Top with half of the grilled vegetables and half of the spinach. Sprinkle with all the feta cheese.
- Top with the remaining Monterey Jack cheese and the second tortilla.
- Grill for 3-4 minutes per side, pressing gently with a spatula, until the cheese melts and the tortillas are golden brown.
- Remove from heat, slice into wedges, and repeat with the remaining ingredients.
Notes
- You can use pre-grilled vegetables if you are short on time.
- Serve with plain Greek yogurt or salsa for dipping.
