Description

A simple and flavorful side dish featuring potatoes and onions coated in garlic and Parmesan cheese, then grilled to perfection.


Ingredients

  • 2 pounds small red potatoes, quartered
  • 1 large yellow onion, cut into wedges
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, toss potatoes and onion wedges with olive oil, minced garlic, rosemary, salt, and pepper.
  2. Preheat your grill to medium-high heat.
  3. Place the seasoned potatoes and onions on a grill basket or directly on the grill grates.
  4. Grill for 20-25 minutes, turning occasionally, until potatoes are tender and slightly charred.
  5. In the last 5 minutes of grilling, sprinkle the Parmesan cheese over the potatoes and onions. Grill until the cheese is melted and golden.
  6. Remove from grill and serve immediately.

Notes

  • You can use any small potato variety.
  • Adjust garlic and Parmesan to your preference.
  • If not grilling, you can roast these in the oven at 400°F (200°C) for 30-35 minutes.
