A simple and flavorful side dish featuring potatoes and onions coated in garlic and Parmesan cheese, then grilled to perfection.

- 2 pounds small red potatoes, quartered
- 1 large yellow onion, cut into wedges
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, toss potatoes and onion wedges with olive oil, minced garlic, rosemary, salt, and pepper.
- Preheat your grill to medium-high heat.
- Place the seasoned potatoes and onions on a grill basket or directly on the grill grates.
- Grill for 20-25 minutes, turning occasionally, until potatoes are tender and slightly charred.
- In the last 5 minutes of grilling, sprinkle the Parmesan cheese over the potatoes and onions. Grill until the cheese is melted and golden.
- Remove from grill and serve immediately.
Notes
- You can use any small potato variety.
- Adjust garlic and Parmesan to your preference.
- If not grilling, you can roast these in the oven at 400°F (200°C) for 30-35 minutes.
