Description

A light and nutritious soup made with green vegetables.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups chopped spinach
  • 2 cups chopped kale
  • 1 cup chopped celery
  • 1/2 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Pour in vegetable broth. Bring to a simmer.
  5. Add spinach, kale, and celery. Cook until vegetables are tender, about 10 minutes.
  6. Stir in parsley.
  7. Use an immersion blender or carefully transfer to a regular blender to blend until smooth.
  8. Season with salt and pepper. Serve hot.

Notes

  • For a creamier texture, add 1/4 cup of unsweetened almond milk before blending.
  • You can substitute broccoli florets for celery if desired.
