Description
A light and nutritious soup made with green vegetables.
Ingredients
Scale
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 4 cups chopped spinach
- 2 cups chopped kale
- 1 cup chopped celery
- 1/2 cup chopped parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in vegetable broth. Bring to a simmer.
- Add spinach, kale, and celery. Cook until vegetables are tender, about 10 minutes.
- Stir in parsley.
- Use an immersion blender or carefully transfer to a regular blender to blend until smooth.
- Season with salt and pepper. Serve hot.
Notes
- For a creamier texture, add 1/4 cup of unsweetened almond milk before blending.
- You can substitute broccoli florets for celery if desired.
