- 2 cups cooked chicken, shredded
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup frozen spinach, thawed and squeezed dry
- 1/2 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 1 large egg
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the cooked chicken, uncooked rice, thawed spinach, feta cheese, Greek yogurt, egg, oregano, garlic powder, pepper, and salt. Mix until all ingredients are evenly distributed.
- Pour the chicken broth into the mixture and stir well.
- Transfer the mixture to the prepared baking dish, spreading it into an even layer.
- Bake for 45 to 50 minutes, or until the rice is tender and the liquid is absorbed.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can use rotisserie chicken for quicker preparation.
- For a tangier flavor, add 1 tablespoon of lemon juice to the mixture before baking.
