Description

A chilled, no-bake pie with a mint chocolate flavor and a cookie crust.


Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup green creme de menthe liqueur
  • 1/4 cup chocolate syrup
  • 1/2 cup whipped topping (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Beat the softened cream cheese, powdered sugar, and softened butter together until smooth.
  2. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream mixture into the cream cheese mixture.
  4. Stir in the green creme de menthe liqueur and chocolate syrup until the color is uniform.
  5. Pour the filling into the prepared chocolate cookie crust.
  6. Chill the pie in the refrigerator for at least 4 hours, or until firm.
  7. Before serving, top with whipped topping and chocolate shavings.

Notes

  • You can substitute the liqueur with mint extract and a few drops of green food coloring for a non-alcoholic version.
  • For a firmer texture, you can add 1 teaspoon of unflavored gelatin dissolved in 2 tablespoons of hot water to the filling mixture before chilling.
