A hearty and flavorful Hungarian beef stew.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 large onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried marjoram
- 1 (28 ounce) can diced tomatoes, undrained
- 4 cups beef broth
- 2 tablespoons tomato paste
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Brown the beef cubes on all sides. Remove beef and set aside.
- Add onions to the pot and cook until softened, about 5-7 minutes.
- Add garlic, paprika, caraway seeds, and marjoram. Cook for 1 minute until fragrant.
- Stir in diced tomatoes, beef broth, and tomato paste.
- Return the beef to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours, or until beef is tender.
- Season with salt and pepper to taste.
Notes
- Serve hot with noodles, potatoes, or crusty bread.
- For a thicker goulash, you can mix 2 tablespoons of flour with a little cold water and stir it into the stew during the last 30 minutes of cooking.
