Description
A recipe for tender pork marinated in ginger and lime, served with fragrant coconut rice.

- 1.5 lb pork shoulder, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon grated fresh ginger
- 1 teaspoon minced garlic
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup jasmine rice
- 1/2 cup water
- 1/2 teaspoon salt
Instructions
- Combine pork cubes, soy sauce, lime juice, ginger, garlic, and pepper in a bowl. Marinate for at least 30 minutes.
- In a medium saucepan, combine coconut milk, rice, water, and salt. Bring the mixture to a boil over medium heat.
- Once boiling, reduce heat to low, cover the saucepan, and simmer for 15 to 20 minutes, or until the liquid is absorbed and the rice is tender. Keep covered off the heat.
- While the rice cooks, heat the vegetable oil in a large skillet over medium-high heat.
- Remove the pork from the marinade, reserving the marinade liquid.
- Add the pork to the hot skillet in a single layer. Cook until browned on all sides, about 5 to 7 minutes.
- Pour the reserved marinade over the pork. Cook, stirring occasionally, until the sauce thickens slightly, about 3 minutes.
- Serve the ginger lime pork over the prepared coconut rice.
Notes
- You can substitute pork tenderloin for pork shoulder if you prefer a leaner cut.
- For extra flavor, add a pinch of red pepper flakes to the marinade.
