Description

German Fried Potatoes (Bratkartoffeln) are a classic side dish made from pan-fried potatoes, onions, and bacon. They are crispy on the outside and tender on the inside.


Ingredients

  • 1 kg potatoes, waxy variety
  • 1 large onion
  • 150 g bacon, smoked
  • 2 tablespoons vegetable oil or lard
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Peel and slice the potatoes thinly.
  2. Peel and thinly slice the onion.
  3. Cut the bacon into small pieces.
  4. Heat the oil or lard in a large skillet over medium-high heat.
  5. Add the bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  6. Add the sliced potatoes to the skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary.
  7. Fry the potatoes for about 5-7 minutes per side, until golden brown and crispy.
  8. Add the sliced onions to the skillet with the potatoes and cook until softened and lightly browned, about 5-7 minutes.
  9. Return the crispy bacon to the skillet.
  10. Season with salt and pepper to taste.
  11. Toss everything together gently.
  12. Garnish with fresh parsley, if desired.
  13. Serve hot.
