Description

A simple recipe for pasta tossed with seared steak and a garlic butter sauce.

Ingredients

Scale
  • 1 pound sirloin steak, cut into bite-sized pieces
  • 12 ounces pasta (fettuccine or linguine recommended)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup beef broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup of the pasta water before draining.
  2. Season steak pieces generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add steak and cook until browned on all sides, about 3-4 minutes. Remove steak from the skillet and set aside.
  4. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in beef broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Add the drained pasta and the cooked steak back to the skillet. Toss to coat.
  7. Stir in Parmesan cheese and a few tablespoons of the reserved pasta water until a light sauce forms. Add more water if needed for desired consistency.
  8. Stir in chopped parsley. Taste and adjust seasoning with salt and pepper.
  9. Serve immediately.

Notes

  • For extra flavor, use fresh herbs like thyme or rosemary when searing the steak.
  • You can substitute the sirloin steak with flank steak or ribeye.
