Ingredients

- 1 pound spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 5 ounces fresh spinach
- 1/4 teaspoon red pepper flakes (optional)
- Salt to taste
- Black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook spaghetti according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While spaghetti is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute. Do not brown the garlic.
- Add fresh spinach to the skillet, a handful at a time, and cook until wilted.
- Add the drained spaghetti to the skillet with the spinach and garlic.
- Toss to combine. Add a splash of the reserved pasta water to create a light sauce.
- Season with salt and black pepper to taste.
- Serve immediately, topped with Parmesan cheese if desired.
Notes
- For extra flavor, you can add a squeeze of lemon juice at the end.
- Feel free to add cooked chicken or shrimp for a more substantial meal.
- Adjust the amount of garlic and red pepper flakes to your preference.
