Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook spaghetti according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While spaghetti cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute. Do not brown the garlic.
  4. Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach wilts, about 2-3 minutes.
  5. Add the drained spaghetti to the skillet with the spinach and garlic.
  6. Toss to combine. Add a splash of the reserved pasta water if the pasta seems dry.
  7. Season with salt and black pepper to taste.
