- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add minced garlic to the skillet and cook until fragrant, about 1 minute.
- Add orzo pasta and stir to coat with garlic.
- Pour in chicken broth and bring to a simmer.
- Reduce heat to low, cover, and cook until orzo is tender and liquid is absorbed, about 10-12 minutes.
- Stir in Parmesan cheese and chopped parsley.
- Return shrimp to the skillet and stir to combine.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- You can substitute vegetable broth for chicken broth.
- Add a squeeze of lemon juice for extra brightness.
- Feel free to add other vegetables like spinach or cherry tomatoes.
