Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  4. Add orzo pasta and stir to coat with garlic.
  5. Pour in chicken broth and bring to a simmer.
  6. Reduce heat to low, cover, and cook until orzo is tender and liquid is absorbed, about 10-12 minutes.
  7. Stir in Parmesan cheese and chopped parsley.
  8. Return shrimp to the skillet and stir to combine.
  9. Season with salt and pepper to taste.
