Ingredients

- 1.5 pounds sirloin steak, cut into 1-inch cubes
- 1.5 pounds baby potatoes, quartered
- 6 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast potatoes for 20 minutes, or until slightly tender.
- While potatoes are roasting, pat steak bites dry with paper towels. Season with salt and pepper.
- In a large skillet, melt butter over medium-high heat. Add minced garlic, thyme, rosemary, and paprika. Cook for 1 minute until fragrant.
- Add steak bites to the skillet and sear for 2-3 minutes per side, until browned.
- Add seared steak bites to the baking sheet with the roasted potatoes.
- Drizzle the garlic butter from the skillet over the steak and potatoes.
- Return to the oven and roast for another 5-10 minutes, or until steak is cooked to your desired doneness and potatoes are crispy.
- Garnish with fresh parsley before serving.
Notes
- Adjust cooking time for steak based on your preference.
- You can use other cuts of steak like ribeye or New York strip.
- Feel free to add other vegetables like broccoli or bell peppers.
