Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, quartered
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast potatoes for 20 minutes, or until slightly tender.
  4. While potatoes are roasting, pat steak bites dry with paper towels. Season with salt and pepper.
  5. In a large skillet, melt butter over medium-high heat. Add minced garlic, thyme, rosemary, and paprika. Cook for 1 minute until fragrant.
  6. Add steak bites to the skillet and sear for 2-3 minutes per side, until browned.
  7. Add seared steak bites to the baking sheet with the roasted potatoes.
  8. Drizzle the garlic butter from the skillet over the steak and potatoes.
  9. Return to the oven and roast for another 5-10 minutes, or until steak is cooked to your desired doneness and potatoes are crispy.
  10. Garnish with fresh parsley before serving.
