Description

Ingredients

  • 1.5 lbs salmon fillet
  • 1 lb baby potatoes, halved
  • 1 lb carrots, peeled and sliced
  • 4 tbsp butter, melted
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp honey or maple syrup (for carrots)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 20 minutes.
  4. While potatoes roast, prepare the salmon. Place salmon fillet on another baking sheet.
  5. In a small bowl, mix melted butter, minced garlic, salt, and pepper. Pour half of the mixture over the salmon.
  6. Add carrots to the baking sheet with the potatoes. Toss with remaining butter mixture and honey/maple syrup.
  7. Roast everything for another 12-15 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender.
  8. Garnish with fresh parsley before serving.

Notes

  • Adjust cooking time based on the thickness of your salmon fillet.
  • For crispier potatoes, roast them for an additional 5-10 minutes.
