A simple and flavorful recipe for garlic butter salmon served with tender roasted potatoes and sweet glazed carrots.

- 1.5 lbs salmon fillet
- 1 lb baby potatoes, halved
- 1 lb carrots, peeled and sliced
- 4 tbsp butter, melted
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- Salt to taste
- Black pepper to taste
- 1 tbsp honey or maple syrup (for carrots)
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast potatoes for 20 minutes.
- While potatoes roast, prepare the salmon. Place salmon fillet on another baking sheet.
- In a small bowl, mix melted butter, minced garlic, salt, and pepper. Pour half of the mixture over the salmon.
- Add carrots to the baking sheet with the potatoes. Toss with remaining butter mixture and honey/maple syrup.
- Roast everything for another 12-15 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
- Adjust cooking time based on the thickness of your salmon fillet.
- For crispier potatoes, roast them for an additional 5-10 minutes.
- Feel free to add other herbs like dill or thyme to the butter mixture.
