Easy and festive cheesecake bars with colorful sprinkles.

- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup rainbow sprinkles
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs and ¼ cup sugar. Stir in melted butter until combined. Press mixture evenly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and ¾ cup sugar with an electric mixer until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Fold in the rainbow sprinkles.
- Pour cream cheese mixture over the crust.
- Bake for 30-35 minutes, or until the edges are set and the center is almost set.
- Let cool completely in the pan on a wire rack.
- Once cooled, lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars.
Notes
- For cleaner cuts, chill the bars for at least 1 hour before slicing.
- You can use different types of sprinkles for varied effects.
