Description

Easy and festive cheesecake bars with colorful sprinkles.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs and ¼ cup sugar. Stir in melted butter until combined. Press mixture evenly into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and ¾ cup sugar with an electric mixer until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Fold in the rainbow sprinkles.
  6. Pour cream cheese mixture over the crust.
  7. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  8. Let cool completely in the pan on a wire rack.
  9. Once cooled, lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars.

Notes

  • For cleaner cuts, chill the bars for at least 1 hour before slicing.
  • You can use different types of sprinkles for varied effects.
