Description

These Fruity Pebbles Cookie Cheesecake Bars are a vibrant and fun dessert, combining a chewy cookie base with a creamy cheesecake layer and a colorful cereal topping. Perfect for parties or a sweet treat.

Ingredients

Scale
  • 1 (17.5 ounce) package sugar cookie mix
  • ½ cup (1 stick) unsalted butter, softened
  • 1 large egg
  • 1 (8 ounce) package cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups Fruity Pebbles cereal, divided

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the sugar cookie mix, softened butter, and 1 large egg. Mix until a soft dough forms.
  3. Press the cookie dough evenly into the bottom of the prepared baking pan.
  4. In another bowl, beat the softened cream cheese and ½ cup granulated sugar until smooth and creamy.
  5. Beat in 1 large egg and vanilla extract until well combined.
  6. Gently fold in 1 cup of Fruity Pebbles cereal into the cream cheese mixture.
  7. Pour the cream cheese mixture evenly over the cookie dough base.
  8. Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
  9. Remove from oven and immediately sprinkle the remaining 1 cup of Fruity Pebbles cereal over the top of the hot cheesecake.
  10. Let cool completely in the pan on a wire rack before cutting into bars.
  11. For best results, chill in the refrigerator for at least 2 hours before serving.

Notes

  • Ensure cream cheese is at room temperature for a smooth cheesecake filling.
  • Do not overbake the cheesecake; it will continue to set as it cools.
  • Sprinkle the cereal on while the cheesecake is still warm so it adheres better.
  • Store leftover bars in an airtight container in the refrigerator for up to 3-4 days.
