- 1 1/2 cups chocolate sandwich cookie crumbs (about 18 cookies)
- 1/4 cup melted unsalted butter
- 1/2 gallon coffee ice cream, slightly softened
- 1 cup chocolate fudge topping, warmed
- 1 (8 ounce) container frozen whipped topping, thawed
- 1/4 cup chocolate shavings or mini chocolate chips for garnish (optional)
Instructions
- In a medium bowl, combine cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch pie plate. Freeze for 15 minutes.
- Spread the softened coffee ice cream evenly over the cookie crust. Return to freezer for at least 1 hour, or until firm.
- Pour the warmed chocolate fudge topping over the frozen ice cream layer. Freeze for another 30 minutes, or until the fudge is set.
- Spread the thawed whipped topping over the fudge layer.
- Garnish with chocolate shavings or mini chocolate chips, if desired.
- Freeze for at least 2 hours, or until completely firm, before serving.
Notes
- For easier slicing, remove the pie from the freezer 10-15 minutes before serving.
- You can substitute other ice cream flavors like chocolate, vanilla, or mint chocolate chip.
- Store leftover pie covered in the freezer for up to 2 weeks.
