A recipe for making sweet fritters using fresh peaches.
Ingredients

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1 large egg
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, diced
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar.
- In a separate bowl, whisk the egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
- Gently fold in the diced fresh peaches.
- Heat about 2 inches of vegetable oil in a deep skillet to 350 degrees Fahrenheit.
- Carefully drop spoonfuls of the batter into the hot oil, about 3 to 4 at a time.
- Fry for 2 to 3 minutes per side, until golden brown.
- Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust generously with powdered sugar before serving warm.
Notes
- For best results, use firm, ripe peaches.
- If you do not have a thermometer, test the oil temperature by dropping a small piece of batter in; it should sizzle immediately and float.
