Description

A straightforward recipe for traditional French garlic soup.


Ingredients

  • 6 cups chicken broth
  • 1 head garlic, cloves separated and peeled
  • 1 large potato, peeled and diced
  • 2 tablespoons olive oil
  • 1/4 cup dry white wine
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the peeled garlic cloves and cook for 5 minutes until they soften slightly. Do not brown them.
  3. Pour in the white wine and let it reduce for 2 minutes.
  4. Add the chicken broth and diced potato to the pot.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  6. Carefully transfer the soup mixture to a blender or use an immersion blender to puree until smooth.
  7. Return the soup to the pot. Season with salt and pepper.
  8. Heat through gently before serving. Garnish with fresh parsley.

Notes

  • For a richer flavor, you can roast the garlic cloves before adding them to the soup base.
  • If you prefer a thicker soup, add one extra small potato.
