These fluffy peanut butter cookies are incredibly easy to make using a cake mix, resulting in a soft, chewy texture and rich peanut butter flavor.

- 1 (15.25 ounce) package yellow cake mix
- ½ cup creamy peanut butter
- 2 large eggs
- ½ cup unsalted butter, softened
- ½ teaspoon vanilla extract
- ¼ cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, combine cake mix, peanut butter, eggs, softened butter, and vanilla extract. Mix with an electric mixer until well combined and a soft dough forms.
- Scoop dough by rounded tablespoons and roll into balls.
- Roll each ball in granulated sugar to coat.
- Place coated dough balls 2 inches apart on the prepared baking sheets.
- Using a fork, gently press down on each cookie in a crosshatch pattern.
- Bake for 8-10 minutes, or until edges are lightly golden and centers are set.
- Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake the cookies; they will be soft when removed from the oven and will firm up as they cool.
- Store leftover cookies in an airtight container at room temperature for up to 3-4 days.
- For extra peanut butter flavor, add 1/2 cup of peanut butter chips to the dough.
