Instructions
- Preheat your waffle iron according to manufacturer directions.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk together the plant milk, oil, apple cider vinegar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter. A few lumps are acceptable.
- Lightly grease the hot waffle iron plates if necessary.
- Pour the batter onto the iron, filling it according to your waffle maker’s instructions for the desired thickness.
- Cook until golden brown and crisp, usually 4 to 6 minutes.
- Remove the waffle and repeat with the remaining batter.
- Serve immediately.
Notes
- For extra crispiness, let the batter rest for 5 minutes before cooking.
- If you do not have apple cider vinegar, use lemon juice instead.
- Serve with maple syrup and fresh fruit for a complete meal.
