Description

Ingredients

  • 4 ounces unsweetened chocolate, chopped
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 2 tablespoons strong brewed espresso or coffee concentrate
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup almond flour
  • 1/2 cup fresh strawberries, sliced
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s directions.
  2. Melt the chocolate and butter together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  3. In a separate large bowl, whisk the eggs and sugar together until pale and slightly thickened, about 3 minutes.
  4. Whisk the cooled chocolate mixture, espresso, and vanilla extract into the egg mixture until just combined.
  5. Gently fold in the salt and almond flour until no streaks of flour remain. Do not overmix.
  6. Lightly grease the waffle iron plates if necessary. Pour the batter onto the hot iron, using enough to cover the surface without overflowing.
  7. Cook according to your waffle iron’s instructions until crisp and cooked through.
  8. Carefully remove the waffles and place them on a wire rack to cool slightly.
  9. Serve the waffles immediately topped with sliced strawberries and a dusting of powdered sugar, if desired.

Notes

  • You can substitute regular brewed coffee for espresso if needed.
  • For extra crispness, you can place finished waffles in a 200°F oven while you cook the remaining batches.
