- 1/2 cup frozen peas and carrots, thawed
- 1/4 cup chopped yellow onion
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- Salt to taste
- Black pepper to taste
- 2 green onions, chopped for garnish
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce (if using), and sesame oil. Set aside.
- Heat vegetable oil in a large wok or skillet over high heat until shimmering.
- Add diced onion and cook until softened, about 2 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.

- Add the day-old rice to the wok. Break up any clumps with your spatula.

- Add the thawed peas and carrots.
