  • 1 cup diced cooked chicken or shrimp
  • 1/2 cup frozen peas and carrots, thawed
  • 1/4 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • Salt to taste
  • Black pepper to taste
  • 2 green onions, chopped for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce (if using), and sesame oil. Set aside.
  2. Heat vegetable oil in a large wok or skillet over high heat until shimmering.
  3. Add diced onion and cook until softened, about 2 minutes.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add cooked chicken or shrimp and cook until heated through, about 2-3 minutes.
  6. Push ingredients to one side of the wok. Pour beaten eggs into the empty space and scramble until just set. Break into small pieces.
  7. Add the day-old rice to the wok. Break up any clumps with your spatula.
