  • Red, white, and blue gel food coloring (for frosting)
  • Assorted sprinkles (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together ½ cup softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in 1 teaspoon vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, alternating with ½ cup milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly among prepared muffin cups.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cupcakes cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  9. For the frosting, beat 1 cup softened butter until creamy.
  10. Gradually add powdered sugar, milk/cream, and 1 teaspoon vanilla extract. Beat until smooth and fluffy.
  11. Divide frosting into three bowls. Tint one bowl red, one bowl blue, and leave one bowl white.
  12. Spoon alternating dollops of red, white, and blue frosting into a piping bag fitted with a large star tip.
  13. Pipe frosting onto cooled cupcakes.
  14. Decorate with assorted sprinkles.
