Description
Make a delicious grilled BBQ chicken pizza for Father’s Day.

- 1 pound prepared pizza dough
- 1/2 cup barbecue sauce
- 1 1/2 cups cooked chicken, shredded
- 1 cup shredded mozzarella cheese
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- Cornmeal or flour for dusting
Instructions
- Preheat grill to medium-high heat.
- Lightly dust a pizza peel or baking sheet with cornmeal or flour. Stretch or roll out the pizza dough into a 12-14 inch circle.
- Carefully transfer the dough to the grill. Grill for 2-3 minutes, or until the bottom is lightly browned and bubbles form.
- Remove the crust from the grill and flip it over onto the pizza peel.
- Spread barbecue sauce over the grilled side of the crust, leaving a small border for the edge.
- Top with shredded chicken and mozzarella cheese. Scatter red onion slices over the cheese.
- Carefully slide the pizza back onto the grill. Grill for another 5-8 minutes, or until the cheese is melted and bubbly and the crust is cooked through.
- Remove from the grill and sprinkle with fresh cilantro.
- Let cool slightly before slicing and serving.
Notes
- You can use leftover cooked chicken or rotisserie chicken.
- Adjust the amount of barbecue sauce to your preference.
- Other toppings like bell peppers, mushrooms, or pineapple can be added.
