Description

Simple grilled chicken kabobs seasoned with fajita spices.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons fajita seasoning mix
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a bowl, combine the chicken cubes, olive oil, fajita seasoning, chili powder, cumin, salt, and pepper. Toss to coat the chicken evenly.
  3. Thread the chicken, bell peppers, and onion pieces alternately onto the skewers.
  4. Preheat your grill to medium-high heat.
  5. Place the kabobs on the preheated grill.
  6. Grill for 10 to 15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
  7. Remove from the grill and serve immediately.
