- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 tbsp olive oil
- 1 large onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 1 packet (1 oz) fajita seasoning
- 1 (10.75 oz) can cream of chicken soup
- 1/2 cup milk
- 1 cup shredded Colby Jack cheese
- 1/2 cup crushed tortilla chips
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add sliced onion and bell peppers. Cook until tender-crisp, about 5-7 minutes.
- Stir in fajita seasoning.
- In a large bowl, combine shredded chicken, cooked vegetables, cream of chicken soup, and milk. Mix well.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle with shredded Colby Jack cheese.
- Bake for 20-25 minutes, or until bubbly and cheese is melted.
- Remove from oven and sprinkle with crushed tortilla chips.
- Serve hot.

- Cooked chicken can be rotisserie chicken for quicker meal preparation.
- Adjust fajita seasoning to your taste.
