  • 2 tablespoons shortening

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
  3. Gradually add the confectioners’ sugar, mixing until well combined and a thick dough forms.
  4. Press the peanut butter mixture evenly into the prepared baking pan.
  5. In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring until smooth.
  6. Pour the melted chocolate over the peanut butter layer and spread evenly.
  7. Refrigerate for at least 2 hours, or until the chocolate is set.
  8. Lift the bars out of the pan using the parchment paper and cut into squares.
