- ½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
- 12 ounces semi-sweet chocolate chips
- 2 tablespoons shortening
Instructions
- Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add the confectioners’ sugar, mixing until well combined and a thick dough forms.
- Press the peanut butter mixture evenly into the prepared baking pan.
- In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring until smooth.
- Pour the melted chocolate over the peanut butter layer and spread evenly.
- Refrigerate for at least 2 hours, or until the chocolate is set.
- Lift the bars out of the pan using the parchment paper and cut into squares.
- Store in an airtight container in the refrigerator.
