- 2 medium zucchinis, grated
- 1/4 cup all-purpose flour
- 1 egg, lightly beaten
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- Squeeze excess moisture from the grated zucchini using a clean kitchen towel or cheesecloth.
- In a medium bowl, combine the drained zucchini, flour, beaten egg, parsley, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form patties.
- Cook for 3-4 minutes per side, until golden brown and crispy.
- Remove the rosti from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve hot.
Notes
- For extra crispiness, you can add 1-2 tablespoons of grated Parmesan cheese to the mixture.
- Serve with sour cream, Greek yogurt, or your favorite dipping sauce.
