Description

Simple homemade vegan pop tarts with a sweet apricot filling.


Ingredients

  • 1 package vegan puff pastry, thawed
  • 1 cup apricot jam
  • 1/4 cup powdered sugar
  • 12 tablespoons plant-based milk
  • 1/4 teaspoon vanilla extract
  • Optional: vegan sprinkles

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheets. Cut each sheet into four equal rectangles.
  3. Spoon about 1 tablespoon of apricot jam onto one half of each pastry rectangle, leaving a small border.
  4. Place the other half of the pastry rectangle over the jam, pressing the edges to seal. Crimp the edges with a fork.
  5. Cut a few small slits in the top of each pop tart to allow steam to escape.
  6. Place the pop tarts on the prepared baking sheet.
  7. Bake for 15-20 minutes, or until golden brown and puffed.
  8. While the pop tarts are baking, whisk together the powdered sugar, plant-based milk, and vanilla extract in a small bowl until smooth. Add more milk if needed to reach desired drizzling consistency.
  9. Let the pop tarts cool completely on a wire rack.
  10. Drizzle the glaze over the cooled pop tarts. Add sprinkles if desired.
