Simple homemade vegan pop tarts with a sweet apricot filling.

- 1 package vegan puff pastry, thawed
- 1 cup apricot jam
- 1/4 cup powdered sugar
- 1–2 tablespoons plant-based milk
- 1/4 teaspoon vanilla extract
- Optional: vegan sprinkles
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unfold the puff pastry sheets. Cut each sheet into four equal rectangles.
- Spoon about 1 tablespoon of apricot jam onto one half of each pastry rectangle, leaving a small border.
- Place the other half of the pastry rectangle over the jam, pressing the edges to seal. Crimp the edges with a fork.
- Cut a few small slits in the top of each pop tart to allow steam to escape.
- Place the pop tarts on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and puffed.
- While the pop tarts are baking, whisk together the powdered sugar, plant-based milk, and vanilla extract in a small bowl until smooth. Add more milk if needed to reach desired drizzling consistency.
- Let the pop tarts cool completely on a wire rack.
- Drizzle the glaze over the cooled pop tarts. Add sprinkles if desired.

- Store cooled pop tarts in an airtight container at room temperature for up to 2 days.
