Simple recipe for baked chicken meatballs with Thai flavors.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha or to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet with cooking spray.
  2. In a large bowl, combine the ground chicken, breadcrumbs, egg, fish sauce, soy sauce, brown sugar, ginger, garlic, cilantro, lime juice, and sriracha.
  3. Mix the ingredients gently with your hands until just combined. Do not overmix.
  4. Roll the mixture into small, uniform balls, about 1 to 1.5 inches in diameter.
  5. Place the meatballs on the prepared baking sheet, leaving a little space between them.
  6. Bake for 18 to 20 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the meatballs are cooked through.
  7. Serve immediately.

Notes

  • You can substitute ground turkey for ground chicken.
  • For a sweeter glaze, mix 2 tablespoons of honey with 1 teaspoon of soy sauce and brush onto the meatballs during the last 5 minutes of baking.
