Ingredients

- 1 lb chicken breast, cut into 1-inch pieces
- 1 cup white rice
- 2 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 1/2 cup salsa
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Instructions
- Combine chicken, rice, chicken broth, black beans, corn, salsa, cumin, chili powder, salt, and pepper in the Instant Pot.
- Stir to combine.
- Secure the lid and set the valve to sealing.
- Cook on high pressure for 8 minutes.
- Allow for a 5-minute natural release, then quick release the remaining pressure.
- Stir well before serving.
Notes
- Garnish with fresh cilantro, avocado, or sour cream.
- Adjust spice level by adding more or less chili powder.
