- Maple syrup for serving
Instructions
- In a shallow dish, whisk together almond milk, eggs, vanilla extract, cinnamon, and nutmeg.
- Dip each slice of bread into the egg mixture, coating both sides.
- Gently fold in blueberries into the batter mixture.
- Heat dairy-free butter or oil in a non-stick skillet over medium heat.
- Cook the French toast slices for 3-4 minutes per side, until golden brown and cooked through.
- Serve immediately with maple syrup.
Notes
- Use slightly stale bread for best results.
- You can add a tablespoon of sugar to the egg mixture if you prefer sweeter French toast.
- Other berries like raspberries or strawberries can be used instead of blueberries.
