Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped bell pepper
  • 1/2 cup biscuit mix
  • 1/4 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked chicken, cream of chicken soup, 1/2 cup milk, onion, celery, and bell pepper.
  3. Pour mixture into a greased 8×8 inch baking dish.
  4. In a separate bowl, whisk together biscuit mix and 1/4 cup milk until just combined.
  5. Drop spoonfuls of biscuit mixture over the chicken mixture.
  6. Drizzle melted butter over the biscuit topping.
  7. Bake for 25-30 minutes, or until topping is golden brown and casserole is bubbly.
