Ingredients

- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup milk
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped bell pepper
- 1/2 cup biscuit mix
- 1/4 cup milk
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cooked chicken, cream of chicken soup, 1/2 cup milk, onion, celery, and bell pepper.
- Pour mixture into a greased 8×8 inch baking dish.
- In a separate bowl, whisk together biscuit mix and 1/4 cup milk until just combined.
- Drop spoonfuls of biscuit mixture over the chicken mixture.
- Drizzle melted butter over the biscuit topping.
- Bake for 25-30 minutes, or until topping is golden brown and casserole is bubbly.
Notes
- You can use leftover roasted chicken for this recipe.
- Add your favorite vegetables like peas or corn.
- For a richer flavor, use cream of mushroom soup instead of cream of chicken soup.
