Description

A straightforward and comforting chicken and rice casserole recipe.


Ingredients

  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a greased 9×13 inch baking dish, combine the uncooked rice and chicken broth.
  3. Add the chicken pieces, cream of chicken soup, milk, and chopped onion to the baking dish. Stir everything together until well combined.
  4. Season with salt and pepper.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 45 minutes.
  7. Remove the foil and sprinkle the cheddar cheese over the top.
  8. Bake for another 10-15 minutes, or until the cheese is melted and bubbly and the rice is fully cooked.
  9. Let it stand for 5 minutes before serving.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • Add frozen peas or carrots during the last 15 minutes of baking for added vegetables.
