Description

A hearty and indulgent casserole featuring macaroni and cheese with a generous amount of bacon.


Ingredients

  • 1 pound elbow macaroni
  • 1/2 pound bacon, chopped
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. In a large skillet, cook bacon over medium heat until crispy. Remove bacon and drain on paper towels, reserving 2 tablespoons of bacon grease in the skillet.
  4. Add butter to the skillet with bacon grease and melt over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5-7 minutes.
  6. Remove from heat and stir in cheddar cheese and Monterey Jack cheese until melted and smooth.
  7. Stir in salt and pepper. Add cooked macaroni and crispy bacon to the cheese sauce and stir to combine.
  8. Pour the mixture into a greased 9×13 inch baking dish. Sprinkle with breadcrumbs.
  9. Bake for 20-25 minutes, or until bubbly and the top is golden brown.
  10. Let stand for 5 minutes before serving.

Notes

  • You can substitute other types of cheese for cheddar and Monterey Jack.
  • For extra flavor, add a pinch of paprika or a dash of hot sauce to the cheese sauce.
  • You can use gluten-free pasta and breadcrumbs for a gluten-free version.
