Ingredients

- 1 pound pasta, cooked and cooled
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Stir in the fresh parsley and crumbled feta cheese.
- Chill for at least 30 minutes before serving to allow the flavors to meld.
Notes
- You can substitute grilled chicken for cooked chicken.
- Add other vegetables like bell peppers or artichoke hearts if desired.
