Description
A rich chocolate cake rolled with a creamy coconut-pecan frosting.

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded sweetened coconut
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 10×15 inch jelly roll pan. Line the bottom with parchment paper and grease the parchment.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Carefully stir in the boiling water. The batter will be thin.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the frosting. In a medium saucepan, combine the butter, brown sugar, and evaporated milk. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 2 minutes, stirring.
- Remove from heat and stir in the vanilla extract, coconut, and pecans.
- Immediately after the cake comes out of the oven, invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.
- While the cake is still warm, spread the frosting evenly over the cake.
- Starting from one of the short ends, carefully roll up the cake with the frosting inside.
- Let the cake cool completely on a wire rack before slicing and serving.
Notes
- For a tighter roll, you can gently roll the warm cake in the towel before frosting.
- Chill the cake roll for at least 30 minutes before slicing for easier cutting.
