Instructions
- Slice the red onion into thin rings.
- Pack the sliced onions into a clean, heat-proof jar.
- In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Add peppercorns and bay leaf if using.
- Bring the mixture to a boil, stirring until sugar and salt dissolve.
- Carefully pour the hot liquid over the onions in the jar, ensuring they are fully submerged.
- Seal the jar and let it cool to room temperature.
- Refrigerate for at least 30 minutes before serving. For best flavor, chill for several hours or overnight.
