Description

A flavorful and satisfying chicken Pad Thai recipe perfect for a weeknight meal.


Ingredients

  • 8 ounces dried rice noodles
  • 3 tablespoons vegetable oil
  • 8 ounces boneless, skinless chicken thighs, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup Pad Thai sauce (see notes)
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind paste
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 large eggs, lightly beaten
  • 1 cup bean sprouts
  • 1/4 cup chopped roasted peanuts
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Cook rice noodles according to package directions. Drain and rinse with cold water.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add remaining 2 tablespoons of oil to the skillet. Add garlic and cook until fragrant, about 30 seconds.
  4. Add the cooked noodles, Pad Thai sauce, fish sauce, tamarind paste, sugar, and red pepper flakes (if using) to the skillet. Toss to combine and cook for 2-3 minutes, until noodles are heated through.
  5. Push noodles to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
  6. Add the cooked chicken back to the skillet. Toss everything together to combine.
  7. Stir in bean sprouts and cook for 1 minute more.
  8. Serve immediately, topped with chopped peanuts, cilantro, and lime wedges.

Notes

  • For Pad Thai sauce: Combine 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, and 1 teaspoon sriracha.
  • Adjust spice level to your preference.
  • You can substitute shrimp or tofu for chicken.
