A flavorful and satisfying chicken Pad Thai recipe perfect for a weeknight meal.

- 8 ounces dried rice noodles
- 3 tablespoons vegetable oil
- 8 ounces boneless, skinless chicken thighs, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup Pad Thai sauce (see notes)
- 1 tablespoon fish sauce
- 1 tablespoon tamarind paste
- 1 teaspoon sugar
- 1/4 teaspoon red pepper flakes (optional)
- 2 large eggs, lightly beaten
- 1 cup bean sprouts
- 1/4 cup chopped roasted peanuts
- 2 tablespoons chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Cook rice noodles according to package directions. Drain and rinse with cold water.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add remaining 2 tablespoons of oil to the skillet. Add garlic and cook until fragrant, about 30 seconds.
- Add the cooked noodles, Pad Thai sauce, fish sauce, tamarind paste, sugar, and red pepper flakes (if using) to the skillet. Toss to combine and cook for 2-3 minutes, until noodles are heated through.
- Push noodles to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
- Add the cooked chicken back to the skillet. Toss everything together to combine.
- Stir in bean sprouts and cook for 1 minute more.
- Serve immediately, topped with chopped peanuts, cilantro, and lime wedges.
Notes
- For Pad Thai sauce: Combine 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, and 1 teaspoon sriracha.
- Adjust spice level to your preference.
- You can substitute shrimp or tofu for chicken.
