Description

A recipe for making crispy deep fried calamari rings and tentacles.

Ingredients

Scale
  • 1 pound squid, cleaned and cut into rings
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, whisk together the flour, cornstarch, salt, pepper, and cayenne pepper.
  2. In a separate bowl, whisk together the milk and egg.
  3. Dip the calamari rings and tentacles first into the wet mixture, then dredge thoroughly in the dry mixture, shaking off excess.
  4. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or deep fryer to 375 degrees Fahrenheit (190 degrees Celsius).
  5. Carefully add the coated calamari to the hot oil in small batches, being careful not to overcrowd the pot.
  6. Fry for 1 to 2 minutes, or until golden brown and cooked through.
  7. Remove the calamari with a slotted spoon and drain on a wire rack lined with paper towels.
  8. Serve immediately.

Notes

  • Serve with lemon wedges and marinara sauce for dipping.
  • For extra crispiness, you can double-dip the calamari: coat in wet, then dry, then wet again, and finally in the dry mixture.
