  • For the Ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a double boiler or microwave-safe bowl, melt the butter and unsweetened chocolate together. Stir until smooth.
  3. Remove from heat and stir in the sugar.
  4. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
  5. In a separate bowl, whisk together the flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If using, stir in the chopped nuts.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  10. Let the brownies cool completely in the pan.
  11. For the ganache, heat the heavy cream in a small saucepan until it just begins to simmer.
  12. Pour the hot cream over the chocolate chips in a bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
  13. Pour the ganache over the cooled brownies and spread evenly.
  14. Let the ganache set for about 30 minutes before cutting and serving.
