- For the Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a double boiler or microwave-safe bowl, melt the butter and unsweetened chocolate together. Stir until smooth.
- Remove from heat and stir in the sugar.
- Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- If using, stir in the chopped nuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan.
- For the ganache, heat the heavy cream in a small saucepan until it just begins to simmer.
- Pour the hot cream over the chocolate chips in a bowl. Let it sit for 5 minutes, then whisk until smooth and glossy.
- Pour the ganache over the cooled brownies and spread evenly.
- Let the ganache set for about 30 minutes before cutting and serving.
Notes
- For an extra minty kick, add a few drops of green food coloring to the batter.
- Ensure the brownies are completely cool before adding the ganache for a neat finish.
- Store leftover brownies in an airtight container at room temperature for up to 3 days.
